Call to Action: Go Cook Something

When Tiana North was a child, her mother had her actively involved in sports which increased her metabolism. There was spare time when school ended and before practice, so she would go home to eat. Because North's mom wouldn't get home from work in time to fix a meal or snack, North knew that going hungry as well as eating junk food was not an option. She wanted something delicious and hearty to eat.

To solve this problem, North and mother Taliba Holliday, collected family recipes that were easy for North to prepare after school.

There are approximately 10 million kids like North and therefore she has written a book to serve as a survival guide.

"Go – Cook Something," published in August 2010, is the first published work written by North and Holliday. The guide introduces children to the complete world of cooking from preparing a meal to providing a shopping list.

"I want [the reader] to be confident in the kitchen. It's a different environment and I want them to be safe in it. It's important that they know how to hold a knife correctly or how to handle the stove. Also, I want them to be capable of shopping smart by knowing that although an item is on sale, they are paying almost a dollar more than they would have if they bought the generic brand," North said.

North is not a stranger to the kitchen. She helped Holliday by stirring the pot when she was a child. In turn, Holliday allowed North to play with the spices. "I am adventurous in the kitchen. I experimented with spices and created new flavors. That's what cooking is about, reinventing a dish."

North used spices on food that she ate from the freezer buffet. The freezer buffet was food that was partially cooked or pre-cooked and frozen on Sunday. Throughout the week, North would heat up a meal to eat after school. "We would have different portions of different meals that I could prepare myself. I just added ingredients and spices."

One of North's favorite dishes is modified to reduce fat, ingredients and work. "Korn Flake is a modified version of a traditional fried chicken recipe. You need very few ingredients. It's healthy because you bake it instead of fry it and instead of coating the chicken with margarine you coat it with egg whites. This turns a very traditional entrée like fried chicken into a high protein low-fat entrée," North said.  Korn Flake Chicken is the first recipe North prepared by herself.

North is currently a pre-med natural science major and psychology minor at Fordham University. In addition, she is a self proclaimed chef who grew up in Philadelphia. "Cooking is my passion. I am an all around lover of food."

Not only has North and Holliday published a guide to promote healthy eating but they are also developing a book tour. "We are trying to put together a campaign to give away 100,000 books in America. We are in the works of getting corporate sponsors. The whole thing would be to inspire kids to eat healthy and to cook for themselves."
