Skinny Dippin' Shrimp Cocktail

Ingredients

  • 1 lb. cooked medium shrimp, chilled
  • ½ cucumber, cut into ½-inch cubes
  • ½ tomato cut into ½-inch cubes
  • 9 green onions, thinly sliced
  • 1 oz. fresh cilantro, finely chopped
  • 1 serrano pepper, thinly sliced
  • 1 8-oz. can tomato sauce
  • 2 tbsp. white vinegar
  • 1 lime

Preparation

  1. In large bowl, combine shrimp, cucumber, tomato, green onion, cilantro, and serrano pepper. Stir in tomato sauce and vinegar.
  2. Squeeze lime juice over mixture, and it is ready to serve.
