Guinness and Amarula ice cream with Melk Tart, and Chocolate “Soil”

Ingredients

Ice Cream

6 litres Guinness
12 egg yolks
250g caster sugar
1 litre cream
100ml Amarula
Guinness to taste

For Melk Tart

35g cornflour
40g cake flour
200g castor sugar
1,125ml milk
3 cinnamon sticks
50g butter
3 eggs

For Chocolate Soil
125g caster sugar
125g ground almonds
75g plain flour
50g cocoa
63g melted butter

Preparation

For Ice Cream
Combine egg yolks and sugar. Add warm cream. Cool it and add Amarula and Guinness
Churn and set in the freezer

For Melt Tart

Mix dry ingredients. Add eggs.Warm milk and butter to infuse cinnamon. Add half of milk to dry ingredients. Add mixture to the remaining milk stirring vigorously to ensure it doesn’t get lumps. Set it on the moulds lined with sweet pastry.
 
For Chocolate Soil
Combine all dry ingredients on rob coupe (food processor) and add butter. Bake at 150 for about 40 minutes.  Keep it on room temperature.
