The sweet smokiness of Chipotles peppers adds a great dimension to the tacos when paired with mayonnaise in this creamy sauce.
- 2 tablespoons canned chipotle chiles
- 1 cup mayonnaise
- ¼ cup sweet pickle relish
- ¼ cup chopped onion
Rinse canned chipotle chiles and discard seeds and veins. In a blender, whirl the chiles with mayonnaise, sweet pickle relish, and chopped onion until smooth. Serve.
For added kick, skip the step in this recipe which calls for rinsing the chipotles. Simply remove the seeds form the chipotle peppers, and add them to the blender along with a touch of the pepper juice from the can. This will add a nice inherent smokiness to the sauce and provide extra heat for those “hotheads” out there!
