The calming fragrance of lavender and tangy citrus make this the perfect cocktail for a quiet evening at home or a relaxing afternoon on the porch. It's inspired by a traditional cocktail in Alsace made with cremant d'Alsace and lemon verbena tea. Make the lavender tea by steeping two bags in one cup of boiling water for 4 minutes. Let the tea cool before proceeding.

Ingredients

  • 1 key lime, sliced
  • lavender sugar (recipe follows)
  • 3 ounces cooled, lightly steeped lavender tea
  • 1 ounce homemade sour mix
  • 3 ounces chilled brut sparkling wine

Directions

  1. Moisten the rim of a tumbler or flute with the sliced key lime. Press the rim of the glass into the lavender sugar, shaking off the excess.
  2. Add the lavender tea and the sour mix to the glass, being careful not to disturb the sugared rim. Top off with the sparkling wine. Serve with ice if it's a hot day.

To make Lavender Sugar, crush 10 dried lavender pods into 1/2 cup sugar and mix to combine thoroughly. Store in an airtight container in cool dry spot.
