Chili Roasted Mussels

Summer is here, and with it has come record temperatures.......it’s time for dining Alfresco! Grab your favorite bottle of wine and head for the shaded patio. This dish would pair well with a nice Pinot Grigio, Fume Blanc or Chardonnay!

With this dish using fresh, local produce and sourcing the best mussels available is the key to making this Mediterranean favorite really pop!

Ingredients

  • 1 pound black mussels
  • 2 garlic cloves chopped fine
  • 1/4 teaspoon fennel seed
  • 1/4 teaspoon crushed chili flakes seed
  • 1/4 teaspoon freshly chopped thyme
  • 4 fresh Roma tomatoes chopped
  • 1/8 cup diced yellow onion
  • Chopped Italian parsley for garnish
  • 2 teaspoons extra-virgin olive oil
  • 1 teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • A slash of white wine

Preparation

  1. De-beard mussels and wash well, set aside.
  2. Chop up onions, garlic and chili separately and set aside, open wine and have a glass.
  3. In large sauté pan heat oil then add garlic, onions and seeds stirring vigorously until garlic just starts to color.
  4. Add mussels and tomatoes salt and pepper and a good splash of white wine
  5. Cover and cook four minutes until mussels start to open then season with salt and pepper.
  6. Finish with chopped parsley and serve in large bowl with crusty French bread.
  7. Garnish with lemon halves.

Tips

Ingredients Your tomatoes should always stay out of the fridge, the riper the better. Mussels are best cleaned on the day you are going to use them, and if they open before you cook them then don’t em...discard all open or broken (dead) mussels. Lemon juice can be substituted for white wine, just make sure it’s fresh.
