- 4 teaspoons Olive oil
- 1/4 cup Diced onion
- 3 Garlic cloves, minced
- 2 pounds Chicken (boneless breast or thigh meat)
- 1/2 teaspoon Sea salt
- 1 cup Uncooked rice
- 1/2 cup BBQ sauce, original or mild
- 1 1/2 cups Water
- Heat oil inlarge skillet. Add onion and garlic cook for 1 min. Add uncooked rice and stir until coated with oil.
- Add chicken and cook until done. Add salt and stir.
- Mix together BBQ sauceand water. Carefully add to rice mixture. Bring to boil. Turn fire to medium and let simmer until rice is tender and all water is absorbed. Serve.
