Candied Sweet Potatoes

This recipe is a great combination of sugar and spice that is simply delicious. Once tender, the sweet potatoes just melt in your mouth.

Ingredients

  • 4 large fresh orange flesh Yams/Sweet Potatoes, peeled and cut into ¼ inch slices
  • ½ cup water
  • 1 stick of butter or margarine
  • 1 cup brown sugar
  • 1 cup granulated sugar, plus 1 extra cup
  • 1 tbsp. cinnamon
  • 1 tbsp. nutmeg
  • 1 tbsp. vanilla

Preparation

  1. Preheat oven to 350 degrees.
  2.  In large skillet place water and bring to boil.  Add potatoes then butter, sugars, spices and vanilla (in that order).  Cover and cook over medium heat until tender, tossing lightly not to break up potatoes until tender.
  3.  Add remaining sugar and place in oven for 30-40 minutes.
