Gourmet Sautéed Collard Greens

Ingredients

  • ¼ cup Canola Oil
  • 1 large Onion
  • 4  Garlic cloves, minced
  • ½ teaspoon Fresh parsley
  • ½ teaspoon Fresh oregano
  • 1  Bay leaf
  • ½ teaspoon Fresh lemon juice
  • 1/2 teaspoon Cracked black pepper
  • 4 pounds Fresh collard greens, washed and chopped
  • ½ cup Sun dried tomatoes, julienne cut
  • 1/2 cup Golden raisins
  • 2 cups Water
  • Sea salt to taste

Preparation

  1. In large skillet add oil and sauté onions and garlic for 2-3 minutes. 
  2. Add next 5 ingredients. Stir.  Add greens and stir with wooden spoon until wilted.  Add sun-dried tomatoes and raisins and continue to stir.  Add water and bring to boil.  Add salt to taste. 
  3.  Turn heat down and simmer until greens are tender or for about 10 minutes. Serve.
