Zesty Asparagus

Ingredients

  • 2 bunches of Asparagus
  • 2 slices sourdough bread (one day old)
  • 2 cloves of garlic, chopped
  • 1 tbsp olive oil
  • 1 tsp LEMON FRESH lemon zest
  • 1 tbsp balsamic vinegar
  • 1 tbsp LEMON FRESH lemon juice
  • 5 tbsp olive oil
  • Parmesan shavings

Directions

  1. Sauté garlic in olive oil and stir in the bread crumbs and fry until brown. Then add lemon zest.
  2. To make the dressing, mix lemon juice with balsamic vinegar and olive oil. Cook asparagus in boiling water until just tender.
  3. Arrange asparagus on plates, drizzle with vinaigrette and top with zesty bread crumbs and Parmesan shavings.
