Sweet Potato Soup

Ingredients

  • 5 sweet potatoes
  • 16-oz. plain yogurt
  • 1 can chicken broth
  • 1 medium white onion
  • 3 Tbsp. butter
  • 1 tsp. nutmeg
  • parsley (garnish)
  • croutons

Preparation

  1. Wash and pierce the sweet potatoes.
  2. Place on a paper towel in microwave oven.
  3. Cook on high for approximately 15 minutes. (Microwave times vary.)
  4. Scoop out the flesh from each potato.
  5. Place sweet potato flesh, yogurt and chicken broth in food processor and puree.
  6. Sauté chopped onion and butter.
  7. Add sweet potato puree, onions and nutmeg in a large pot.
  8. Heat until slightly boiling.
  9. Add nutmeg and simmer for 30 minutes.
  10. Top with parsley and serve hot with croutons.
