Sriracha Red Pepper Aioli with Bacon

Sriracha Red Pepper Aioli with Bacon

Just like a lot of foodies, I love bacon. For years, I tried to switch it up and just eat turkey bacon because it is healthy than the traditional pork selections. But I have to admit, pork bacon slowly slipped back into my life as the smell and taste is just like no other. While I don’t eat it often, when I do, I like to savory each slice.

Over the years, bacon-inspired food and drink recipes have been everywhere. So I decided to do a few of my own using Just Mayo by Hampton Creek. Of course a twist on a traditional BLT would have been perfect, especially with a little kick from the Chipotle and Sriracha flavors. Instead, I went for two great recipes that are my everyday favorites. You can read more about Just Mayo products in my review for our CN Review column, but to put it briefly, if you love mayo but have had to give it up due to the gluten or becoming a vegan, you just may rejoice with this product.

I love simply recipes that ooze with tons of flavor. Being a big fan of aioli, I wanted to create a recipe that would be great for dipping my French fries, roasted vegetables and more. I created a Sriracha Red Pepper Aioli with Bacon recipe that I think is to die for. You have the delicious flavor from the Sriracha Just Mayo along with the red pepper and bits of bacon. I also created a pasta salad using the Chipotle Just Mayo that will be a big hit this summer at picnic and family gatherings.

Enjoy both recipes below and let me know how you like them below.

1 small red pepper, cut into medium pieces

2 cloves garlic

2-3 pieces smoked bacon, cooked and small chopped

12 ounces Sriracha Just Mayo

1. In a food processor, add the red pepper, garlic and bacon and pulse to just get the ingredients smaller.

2. Add the Just Mayo and blend until all ingredients are mixed together thoroughly. Pour into a small bowl and enjoy.

2 cups elbow macaroni pasta

1 small tomato, small diced

½ red onion, small diced

1 red, yellow or orange bell pepper, small diced

½ jalapeño, small diced

3-4 slices smoked bacon, cooked and chopped

¾ - 1 cup Chipotle Just Mayo

salt and pepper to taste

¼ cup green onions, chopped

1. In a sauce pot, bring 2cups of water to a boil and add pasta. Cook about 5 minutes or until soft. Drain and set aside.

2. In a medium bowl, add tomato, onion, bell pepper, jalapeno and bacon and mix all ingredients together. Add in pasta and stir to mix all ingredients.

3. Add in Just Mayo and mix until all ingredients are covered. Add salt and pepper to taste if you want. Place in refrigerator for 30 minutes before serving. Garnish with green onions on top.

The beauty of this recipe, as with all recipes, is that you can substitute any of the ingredients as you wish. You can use turkey bacon or no bacon at all. Both recipes are very easy full of flavor from the Just Mayo alone.
