Makes 4 – 6 servings
1 tablespoon ginger, fresh peeled and grated
1 tablespoon unseasoned rice vinegar
2 teaspoons light or dark brown sugar, packed
¼ curry powder
1/8 teaspoon red pepper flakes
½ jicama, julienned
1 green apple, julienned
1 each stone fruit: peaches, nectarines, mango, julienned
2 scallions, thinly sliced diagonally
- In a bowl, whisk first five ingredients together. Add fruit and mix until all is covered. Serve or cover and store in the refrigerator.
TIPS AND NOTES
- Stone fruit will depend on what is in season. Other options for this recipe include apricots, plums, apriums and pluots.
- For more flavor, make the slaw the day before.
