Pear Walnut Crumble

Makes 6-8 servings

INGREDIENTS

¼ cup all-purpose flour
½ cup rolled oats (quick-cooking or regular)
½ cup walnuts
½ cup brown sugar
6 ounces unsalted butter, softened and cut into 7 – 9 large chunks
½ teaspoon baking soda
½  teaspoon salt
1 teaspoon vanilla extract
3 – 4 pears peeled, cored and sliced into ½ slices
¼ teaspoon of cinnamon
2 tablespoons sugar
1/4 cup vanilla bean ice cream, optional

PREPARATION

  1. In a food processor (or large mixing bowl), combine flour, oats, walnuts, brown sugar, butter, baking soda , salt and vanilla extract. Pulse until mixture is thoroughly blended and resembles coarse crumbs. Set aside.
  2. Put peeled, cored and sliced pears in a bowl and sprinkle with the cinnamon and sugar. Toss until sugar and cinnamon are evenly distributed. Place pears in a 9” baking dish.  Pour crumb mixture evenly on top of pears, spread evenly and pat down.
  3. Bake until golden brown, about 30 to 35 minutes. Cool completely on a wire rack before serving.
