Watermelon – Blueberry Medley with a Twist of Lime

Watermelon is the ultimate summer fruit, but you can also find it at the top of the fall season in some states.  It is definitely our favorite and this year we mixed it up a little by throwing in some blueberries, giving it a toss and squeezing fresh lime juice over the top.  Not sure why we didn’t think of this sooner.

INGREDIENTS

1/2 small watermelon, medium diced
1/2 cup fresh blueberries
1 lime, cut in half

PREPARATION
  1. In a bowl, add watermelon and blueberries.  Toss to mix.  Take 1/2 lime and squeeze over the top and toss the fruit again. Serve immediately.
NOTES & TIPS
  1. This recipe is perfect on-the-go.  Simply get an 8 oz. mason jar and add fruit in with a 1/2 lime.  When ready to eat, squeeze the lime on top, give the jar a shake and enjoy.
  2. To maximize the juice in the lime, roll it back and forth on a hard surface to soften it up.
