Fresh Kale and Smoked Turkey Sausage Stir-Fry

Cuisine Noir Magazine - Kale and Turkey Sausage Stir-Fry

INGREDIENTS

½ pound smoked turkey sausage, cut in slices on the diagonal
3 tablespoons extra-virgin olive oil
2 cloves garlic, minced
¼ cup white onion, thinly sliced
1 small red bell pepper, chopped
1 small yellow or orange bell pepper, chopped
½ pound fresh kale, washed, chopped into small pieces
salt and pepper for seasoning

PREPARATION

1. In a skillet on medium-high heat, cook sausage until browned, about 3 minutes, and set aside.

2.  In a large skillet, add oil and let warm on medium-high heat. Add garlic and cook until fragrant. Add onions and bell peppers. Cook for about 2–3 minutes.

3.  Add sausage and mix all ingredients well so everything is coated in the oil and garlic.

4.  Add kale by the handful and let it cook down, 1–2 minutes. Mix in before adding more. Once all of the kale has been added, add seasoning, toss again and serve.

NOTES & TIPS
Do not overcook the kale. It should be a little crunchy. Remove the sausage for a vegan and vegetarian delight.
