Prep time: 25 mins | Cook time: 55 mins | Serves: 6 – 8
2 pounds sweet potatoes, washed and dried (2 cups puréed)
2 large eggs
1 cup brown sugar
1 cup white sugar
½ cup melted butter
pinch kosher salt
½ teaspoon ground nutmeg
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
1 can evaporated milk
2 tablespoons orange juice
1 9-inch unbaked pie shell
- Beat eggs, add sugar and mix well.
- Add remaining ﬁlling ingredients. Mix at a high speed, strain and pour into pie shell.
- Bake at 400°F for 10 minutes, reduce heat to 350°F, bake 50 minutes longer. Serve warm.
Kelli’s Kooking Tip: Garnish with cool whip and sprinkle a pinch of cinnamon. Don’t forget the vanilla bean ice cream.
